All of our cows and steers are under our care, we do not buy feeder cattle from the livestock auctions that we do not know what type of care they came from.
 
Never fed any grain, never given any antibiotics, just grass from start to finish. Every cow will have a different percentage of ground to fat ratio, our current cow came with 93/7. Because our cows are never given grain and roam freely on fresh pastures, they have a much lower fat content then feeder cattle and spent dairy cows.
 
For our ground beef, we designate “ground beef cattle” this cow will only have the select cuts taken out and all else will be ground, giving a richer and more flavorful ground meat than you’re used to. Our ground contains round, sirloin, rump, chuck, arm, all roasts, skirt, Babette, hanging, tender, flanks and half of the filets.
