While the oven is heating up, take a moment to prepare your cooking surface. Spray a large skillet generously with cooking spray to ensure that your chicken does not stick during the cooking process. If you don't own a large skillet, you can use a baking sheet lined with aluminum foil.
Next, it’s time to spatchcock your chicken, which involves removing the backbone to allow the bird to lay flat. This technique not only reduces cooking time but also promotes even cooking throughout the chicken. Once your chicken is spatchcocked, season it generously with lemon pepper seasoning.
